Learn how to manage food service profit margins by identifying and controlling the main sources of cost and waste: food products, beverage and labor.

The course will give you a comprehensive look at the methods, tools and techniques to control food, beverage, and labor costs in order to increase operating profit.

Topics include principles of purchasing, production planning and control, menu analysis, standard and actual costing, sales income control and employee productivity.

Upon the successful completion of this course, you will be able to set up a cost control system based on "prime costs".

In this workshop, you will learn your way around a large-volume professional kitchen by practicing the production of many types of international cuisine and using the material and equipment in compliance with industry standards.

This hands-on course will teach you about the different zones of a bakery, as well as the material, equipment and the raw goods used to make bread.

You will learn to calculate quantities, execute each step of bread making, and reproduce basic recipes.

Learn the sweet art of making pastries and desserts in this hands-on course covering the operations of a professional pastry facility, basic ingredients and classic recipes for pastries, chocolate and candy.

This course will teach you the essentials of cooking and serving food in an on-the-go environment.

In a class experience full of experiments, you will learn how companies come up with new food concepts and test and develop them into viable products.

You will reinvent classic recipes, deconstruct a dish, and create your own signature dish and original non-alcoholic cocktail.

Customer-facing service roles are the true test of quality for F&B businesses, so this course focuses in instilling five-star standards into every step and process of the service areas.

You will learn how to set up and manage service stations and run a service brigade.

This workshop will teach you the contemporary method of "sous-vide" cooking which removes air from the cooking environment, thereby preserving flavors, nutrients, and tenderness thanks to precise low temperatures cooking . This course will teach you to use the tools and techniques of this healthy culinary method.

During this week, EHL collaborates with the CREA and EHL students are taught by the "Pope of Sous-vide cooking", Bruno Goussault himself! They simply learn from the inventor of these techniques and benefit from his experiments and improvements over 3 decades of Excellency.

Event Management

During this week-long course, you will oversee different events (aperitif, cocktail, gala dinner, etc.) and deliver them assuming a specific role in a service brigade.

Through lecture sessions, you will learn how to ensure that staff actions and initiatives reflect the philosophy of service.

You will organize production based on the events and the stock, complete a preparation and produce a dish based on the recipe sheet provided.

In this course, you will learn to handle the key logistical areas of an F&B business, including managing an inventory of kitchen equipment and food products, implementing cleaning procedures according to defined protocols, and establishing waste management procedures.

In this class, you will have the opportunity to create a unique event experience using your knowledge from the operations and catering courses.

In the Lounge Bar part of the course, you will learn to prepare and run a cocktail bar with the knowledge of product categories and cocktails for effective sales.

This course will give you the confidence to manage wine-related activities at hotels, bars and restaurants.

You will learn the science of wine making, participate in wine tastings, and learn about product selection and wine-pairing. You are not required to consume alcohol if you don't wish to.

This course will teach you the production processes and properties of different types of alcoholic beverages, and the principles of flavor combining and responsible bar service.

You will practice selling drinks during the practical workshops at EHL’s bars. You are not required to consume alcohol if you don't wish to.

Every year, our students experience both one-day and full-week fieldtrips to go and meet farmers, suppliers, producers (...) and F&B professionals in their restaurants and hotels where they will have memorable lunches and dinners.

The program is updated every year so that each CREM promotion benefits from an exclusive experience and discover different regions (Burgundy, Lyon, Graübunden ...) and industries (vineyards, chocolate makers, cheese makers, barista ...)

As an example, during their 2019 fieldtrip in the Graübunden region, our students ended in Zürich for a Barista masterclass in the morning with Matthieu Theis, 3-time Swiss barista champion and ranked #3 at the 2018 World Barista Championship. Matthieu introduced them to the world of Specialty Coffee and new F&B trends.
