Term I: Course modules and operational skills on campus
| The gastronomical experience You will experience fine dining, cuisine and wine, in the context of different cultures. While you will review traditional European techniques of cooking and table service, the emphasis is on discovery: the world of spices, new trends and sensory tendencies, from slow food through fusion to molecular cuisine. You will discover how table settings and ambiance influence the dining experience. You will also explore the world of beverages, including wine-tasting in the schools wine laboratory, and the harmony between food and wine. Tools and techniques To translate your creative ideas into reality you need to become familiar with the tools and procedures in kitchen, stewarding and service. Service classes will focus on customer satisfaction and sales techniques. Courses:
