EHL Master’s students are consultants for the Skylon Restaurant in the Royal Festival Hall, London

Five Master’s students had the opportunity to visit Skylon Restaurant over the course of two days for an in-depth look at their operation. Joined by EHL professor Remi Walbaum, the team looked at ways to increase day-time business at the Skylon.

Skylon restaurant has been open for nearly two years and features arguably the best panoramic view of the Thames River, with floor-to-ceiling windows and a unique space featuring a grill, bar/lounge and dining area. Located in the Royal Festival Hall and immersed in the busy Southbank district, Skylon is looking to establish itself as the premier restaurant of choice in the area.

The team will have the chance to present their findings and suggestions in person to Liz Cave, Director of Human Resources, and Simon King, General Manager, later this month when they are both guests at the Ecole hôtelière de Lausanne.
