Born in Strasbourg in the French region of Alsace, Nicolas Schweitzer trained at the Ecole Hôtelière Alexandre Dumas located in Illkirch, also in Asalce. In 2004, he graduated from a technical high school where he specialized in hotel/restaurant management before earning an associate’s degree (BTS) in 2006 in the art of foodservice.
During his five years of studies, Nicolas Schweitzer completed internships in a variety of areas: The Hôtel de Paris in Monaco in the front-of-house department; in Northern Ireland at the Magherabuoy House Hotel (kitchen staff); and the Home Plazza hotel in Paris in the reception/concierge department.
Nicolas Schweitzer started his career as the restaurant manager at Chez Pierre in Alsace in 2006.
After nearly two years at this establishment, he decided to move to Toronto to improve his English while working alongside Chef Marc Thuet at Bistro & Bakery Thuet.
In 2008, he returned to France where he was in charge of the breakfast service and was a chef de rang at the Parc hôtel in Wangenbourg-Engenthal.
In 2009, he returned to Canada, this time Montreal, where he worked for a year at Pintxo as part of the front-of-house staff.
He landed in Switzerland in 2010 and spent two years at the Golf de Lausanne restaurant as a Chef de rang, before spending three years at the Restaurant du Jorat in Mézières (Canton of Vaud) as restaurant manager.
On the back of this experience, Nicolas Schweitzer joined EHL in January 2015 as an F&B assistant. He passed the internal competition and thus became a Lecturer – Practical Arts in September 2016.
